Suitable for using unsweetened frozen strawberries
Use strawberry butter on pancakes and waffles instead of syrup. For a wonderfully intense combination of strawberry flavors, try strawberry butter on strawberry pancakes, topped with a few fresh strawberries!
Yield: about 4 cups
1 10-ounce package frozen strawberries, thawed
1 cup soft butter
2 cups confectioners’ sugar
Combine all ingredients in the bowl of a food processor and mix until smooth. Pack into an airtight container and refrigerate. The butter will also keep several weeks in the freezer. You can make this with a blender rather than a food processor, if you do it in two batches.
