Strawberry Balsamic Mozzarella Chicken

A fresh twist on a classic Caprese Chicken! Our recipe for Strawberry Balsamic Mozzarella Chicken uses sweet Oregon Strawberries, cubed mozzarella and tangy balsamic for a delicious weeknight dinner.

4 boneless, skinless chicken breasts
1 T olive oil
2 t Italian seasoning
2 t kosher salt
1/2 t garlic powder
1/2 t black pepper
1 pint fresh strawberries, stems removed and chopped
8 oz fresh mozzarella, cubed
2 T thinly sliced basil
Aged balsamic or balsamic glaze, to taste


1. Combine the Italian seasoning, salt, garlic powder, onion powder, and pepper in a small bowl. Stir to combine.
2. Drizzle the chicken with olive oil, then sprinkle with the seasoning blend. Flip the chicken over, then oil and season the other side.
3. Heat a grill or grill pan over high heat. Place the chicken breasts on the grill and cook for 5-6 minutes per side (or until the internal temperature reads 165°F).
4. In a small bowl, combine strawberries, mozzarella and basil.
5. Arrange the chicken breasts on a platter or individual plates. Top each chicken breast with the strawberry mixture. Just before serving, drizzle with balsamic. Enjoy!
