Boozy popsicles?!?! Oregon Strawberry Mojito Popsicles are sure to hit the spot on a hot day. You can make these alcohol free by leaving out the rum for a refreshing treat that all ages can enjoy.
Strawberry Mojito Popsicles
1½ lbs fresh or thawed frozen Oregon strawberries
½ C fresh mint leaves
3 T sugar
3 T white or gold rum, optional
2 T fresh lime juice
- In a blender, combine Oregon strawberries, mint, sugar, optional rum, and lime juice. Blend until smooth.
- Pour strawberry mixture into a 10-popsicle mold. Place lid on top and insert popsicle sticks. Freeze until solid, at least 8 hours or overnight.
- To remove popsicles, dip mold into cold water just long enough to loosen popsicles. Transfer to a baking sheet and return to freezer unless serving immediately. Store any uneaten popsicles in a resealable freezer bag.
